From LCUP CITHM to the Culinary World Stage

La Consolacion University Philippines – College of International Tourism and Hospitality Management (LCUP CITHM) proudly celebrates the remarkable achievement of its alumna, Chef Jade Mauricio Cunningham, who is making history in the United States by establishing Carabao Napa — the first-ever Filipino restaurant in Napa Valley, California.

Chef Jade's culinary journey began right here at LCUP CITHM, where she earned her Bachelor of Science in Hotel and Restaurant Management (BSHRM). The values, skills, and foundational knowledge she acquired at LCUP equipped her to thrive in the international hospitality and culinary industry.

Early Passion Meets Academic Excellence

Jade's love for cooking began at the age of seven in Bulacan, helping her family cook local dishes. This early spark led her to pursue professional training at LCUP CITHM, where she immersed herself in hands-on kitchen experiences, culinary theory, hospitality management, and international standards in service. LCUP CITHM’s strong curriculum and commitment to global competitiveness served as a launchpad for Jade’s promising career.

LCUP CITHM to the World: A Career Takes Flight

While still a student at LCUP, Jade participated in global internship programs — a key feature of the College’s internationalization efforts. She had her first major international culinary experience in Cincinnati, USA, and after graduation in 2018, moved to California where she gained valuable training at prestigious establishments like The Meritage Resort and Spa and the world-renowned French Laundry.

These experiences further honed her craft — but it was the foundation built at LCUP CITHM that enabled her to thrive in these competitive environments.

Carabao Napa: A Dream Realized

After a successful series of Filipino pop-up dinners in late 2022, Chef Jade, along with her husband and business partner, officially launched Carabao Napa in June 2025. The restaurant — named after the hardworking Philippine water buffalo — offers a modern take on classic Filipino dishes, blending culinary artistry with Filipino heart and heritage.

Located in the heart of Napa Valley, a globally recognized food and wine destination, Carabao Napa is the first Filipino restaurant in the region, boldly putting Filipino cuisine in the spotlight — from kare-kare and sisig tacos to halo-halo with candied hibiscus.

Chef Jade Cunningham’s success story is a living testament to the excellence of LCUP CITHM in producing globally competent, values-driven professionals in hospitality and tourism.
